Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

Service

01

Robata & Warayaki

Bonito from Kochi and Omi beef from Shiga, grilled over straw right before you. Seasonal fish and vegetables draw out their fullest flavor over charcoal.

02

Sake & Local Brews

A generous selection of sake chosen from across Japan, including local Shiga brews — from dry to sweet. Our staff suggest the one glass that suits your dish, so you can enjoy sake tasting in Yasu.

03

Seafood & Sashimi

Fresh fish shipped straight from the port, finished into sashimi by skilled hands. Enjoy the seafood of Yasu in seasonal plates such as our five-kind sashimi platter.

04

Omi Beef & Omi Chicken

Shiga's specialty Omi beef, straw-grilled or miso-marinated, and overnight-dried Omi chicken. Enjoy Shiga's premium ingredients dynamically over charcoal in Yasu.

05

Private Rooms & Banquets

Relaxing private rooms, banquet courses with free-flow drinks, and full-venue bookings on request. Steps from Yasu Station — ideal for company parties and gatherings.

How to enjoy Robata

Robata Story

01

A 45 seat room puts you near the fire

Thirteen counter seats, twelve table seats, eight in the private room and twelve on the terrace: 45 in all. In a room this size, the flames and the crackle of the straw reach every seat.

02

Nothing added, just the ingredient

The finished surface carries the smoke of burning straw. Leave the first slice unseasoned and taste the natural sweetness underneath.

03

In winter, cold yellowtail with salt and citrus

Later in the plate, shift with condiments, rock salt and citrus. Winter brings kanburi yellowtail, whose fat loosens and lightens against salt and citrus.

04

A cigarette and a cup, out to the terrace

Every seat, including the twelve on the terrace, allows smoking. Our staff suggest Shiga sake, dry through sweet, to match your sashimi or straw-grilled dish.

The Essence of Yasu Izakaya: A Quest for Seasonal Ingredients

The Deciding Factor in Choosing a Yasu Izakaya: The Thrill of Ingredient-Focused Cuisine

Among the many izakayas in Yasu, finding one where you can truly savor a meal to your heart's content can sometimes be a challenge.

You might find yourself wondering, What kind of ingredients do they use? or Are they really fresh?

At our restaurant, we prioritize our commitment to ingredients above all else, ensuring our customers can dine with peace of mind and a smile. Today, we'd like to share the details of this unwavering belief and practice, cultivated over many years of welcoming guests in Yasu.

The Secret Behind Yasu Seafood: Gathering Local Bounty and Nationwide Seasonal Delicacies

One of the pillars of our cuisine is the rich bounty of the sea. When you hear Yasu Seafood, your expectations for fresh, delicious fish and shellfish are likely to soar. We make no compromises, from sourcing to preparation, to bring you the very best of the ocean's gifts.

Sourcing with a Pursuit of Freshness: A Discerning Eye Every Morning

  • Direct from the Fishing Port: We partner directly with several trusted fishing ports, having the morning's catch delivered straight to our restaurant using the optimal methods. By cutting out the middleman, we can serve you seafood that is literally fresh off the boat.
  • Selection by Master Chefs: Our head chef and kitchen staff use their years of experience and a discerning eye to rigorously inspect each fish. They check for firmness, color, clarity of the eyes, and even the feel, selecting only the finest specimens.
  • Following the Seasons: We identify the best seafood for each season and actively incorporate these timely delicacies into our menu. From red sea bream in spring and rock oysters in summer to returning bonito in autumn and yellowtail in winter, we offer the full charm of seasonal Yasu Seafood.

Preparation Methods that Showcase Delicate Skill

Even the freshest seafood is wasted if its natural flavors aren't brought to their full potential. At our restaurant, we apply the optimal cooking method for each type of fish and its condition.

  • Sashimi: Savoring the Pure Flavor: Sashimi is the simplest preparation, yet it demands the highest quality and freshness. By carefully slicing and beautifully arranging it, we allow you to fully enjoy the fish's natural umami, sweetness, and texture.
  • Grilled or Simmered for Deeper Flavor: Seasonal fish reveals a different character when grilled over our robata or slowly simmered. We use techniques that lock in the ingredients' umami and elevate them to a richer, more profound taste.

The Essence of Yasu Robatayaki: Bringing Ingredients to Life with the Magic of Charcoal

Another of our specialties is Yasu Robatayaki, a lively performance unfolding right before your eyes at the counter. Watching our skilled chefs slowly grill carefully selected fresh ingredients over charcoal is an entertainment experience that stimulates all five senses.

The Exquisite Aroma of Binchotan Charcoal

Essential to robatayaki is binchotan charcoal, renowned for its high heat and superior aroma. Its far-infrared rays quickly sear the surface of the ingredients, locking in umami while imparting a unique, savory fragrance. This charcoal magic transforms even simple grilled dishes into exceptional creations.

  • Charcoal-Grilled Fresh Vegetables: We slowly grill succulent vegetables, primarily seasonal produce from Shiga Prefecture sourced from our partner farms. This condenses their natural sweetness and aroma, creating a simple yet profound flavor.
  • Charcoal-Grilled Select Meats: We also serve local brand meats like Omi beef and other high-quality cuts from across Japan on our robata grill. The excess fat drips away, concentrating the meat's umami into a fragrant dish that pairs perfectly with Yasu sake.
  • Robatayaki Seafood: Of course, our fresh seafood is also exceptional when grilled over the robata. The smoky aroma of the charcoal enhances the flavor of the fish and shellfish. We grill shellfish until plump and fish until the skin is perfectly crisp, maximizing the ingredients' natural qualities.

The Art of the Grill: Where a Chef's Skill Shines

Our robatayaki is more than just grilling. We delicately adjust the heat and cooking time based on the type and thickness of the ingredient, as well as our customers' preferences. Crispy on the outside, juicy on the inside. Identifying that perfect moment of deliciousness and serving it at its peak—this is the essence of Yasu Robatayaki and a skill honed over many years.

While operating in Yasu, we have always cherished our connection with the local community. We feel it is our mission to actively incorporate local ingredients and share the culture and charm of the region.

  • Collaboration with Local Producers: We build trusting relationships by working directly with local producers of fresh vegetables and Shiga Prefecture's brand-name meats. We take great joy in serving our customers ingredients filled with the passion of these producers.
  • Seasonal Events and Fairs: We periodically host fairs themed around seasonal ingredients and events that pair local sake with our cuisine. Through these initiatives, we hope to deepen our connection with customers while helping them rediscover the charm of our region.
