Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

How to enjoy Robata

Robata Story

01

A 45 seat room puts you near the fire

Thirteen counter seats, twelve table seats, eight in the private room and twelve on the terrace: 45 in all. In a room this size, the flames and the crackle of the straw reach every seat.

02

Nothing added, just the ingredient

The finished surface carries the smoke of burning straw. Leave the first slice unseasoned and taste the natural sweetness underneath.

03

In winter, cold yellowtail with salt and citrus

Later in the plate, shift with condiments, rock salt and citrus. Winter brings kanburi yellowtail, whose fat loosens and lightens against salt and citrus.

04

A cigarette and a cup, out to the terrace

Every seat, including the twelve on the terrace, allows smoking. Our staff suggest Shiga sake, dry through sweet, to match your sashimi or straw-grilled dish.

The Captivating Pairings of Sake and Wine in Yasu

The Meeting of Sake and Wine: A Highlight of Yasu's Gastronomy

To everyone in Yasu looking for a place to converse with loved ones or enjoy a pleasant time with friends. We don't just serve food; we wish to deliver an encounter with fine beverages that perfectly complement each and every dish. In particular, we feature a rich variety of sake from Yasu, steeped in Japanese tradition, and wines beloved around the world. We will introduce to you the secret to enjoying these and creating a memorable night.

Ingredients nurtured by Shiga's rich nature, especially the flavor-packed Omi beef and fresh seasonal fish from Lake Biwa, are the essence of Japan's food culture. When faced with these wonderful ingredients, surely everyone has thought at least once, Which drink will best bring out their charm?

At our establishment, we promise to answer such questions and enrich your dining time, making it more moving by proposing the best pairings. Why not let us help you stage a special night in Yasu?

Clearing Up the Confusion! Yasu Sake or Wine: Which Should You Choose?

The stereotype that sake is for Japanese food, wine is for Western food is a thing of the past. Modern food culture has diversified, and both sake and wine have greatly expanded their range. That's why it's natural to feel indecisive, whether you're looking at a selection of sake from Yasu or a wine list, thinking, What should I drink today? This indecision might deepen especially when faced with rich dishes like Omi beef or exquisite plates made with plenty of seasonal fresh fish.

But please don't worry. That very indecision is the key to opening the door to a new culinary experience. At our restaurant, our staff, with expert knowledge of both sake and wine, will propose the optimal bottle to match your mood and the dishes you'll be enjoying.

  • The diverse expressions of sake: Depending on the rice variety, yeast, polishing ratio, and brewing method, the flavors are infinite—from those with fruity ginjo aromas to junmai sake packed with the umami of rice, and aged sakes with increased depth. It's delicious chilled, at room temperature, and shows a different character when warmed.
  • The brilliant personality of wine: Depending on the grape variety, region, and vintage, wine produces a surprisingly diverse range of aromas and flavors. From light white wines to full-bodied red wines, and even dessert wines perfect for after a meal, their true value is revealed through pairings with food.

In this section, we aim to heighten anticipation for your visit by addressing the simple question of which one should I choose? and presenting the diverse options of sake and wine we offer, briefly conveying their charms.

The Art of Blissful Pairings to Enhance Omi Beef and Seasonal Delights

To help you fully savor Yasu's abundant ingredients, we propose the magic of pairings woven by sake and wine. Food and drink enhance each other's strengths, creating new discoveries and emotions with every bite. This is the true pleasure of dining.

Finding the Perfect Match for Shiga's Prized Omi Beef

Omi beef, one of Japan's three great wagyu brands, is characterized by its fine texture and melt-in-your-mouth umami of the fat. To help you enjoy this Omi beef at its best, we have prepared a variety of sake from Yasu and wines.

  • Lightly Seared Omi Beef Sushi: The crispness and fruity aroma of a Junmai Ginjo pair exquisitely with the fragrant, melting fat of lightly seared Omi beef. The rice umami of the sake enhances the meat's sweetness and provides a clean finish. For wine, a light Pinot Noir creates an elegant harmony without overpowering the meat's delicate flavor.
  • Omi Beef Steak Grilled on Lava Rock: For a steak where you can fully enjoy the meat's inherent powerful umami and aroma, we recommend a sake with concentrated rice umami and richness, like a Junmai Daiginjo Genshu (undiluted). The meat's fat and the sake's umami unite in the mouth, leaving a rich aftertaste. For wine, a full-bodied red with firm tannins, like a Cabernet Sauvignon from Bordeaux, will tighten the meat's umami and create a powerful marriage.
  • Omi Beef Tataki with Homemade Ponzu Sauce: For this refreshing tataki, the light mouthfeel and crisp acidity of a Tokubetsu Junmai are a great match. The citrus notes of the ponzu and the aroma of the sake blend beautifully. For wine, a red with a smooth palate, such as a Merlot, will gently envelop the meat's umami.

The Artistry of Pairing with Seasonal Fish and Vegetables

The bounty of Lake Biwa, seasonal fresh fish from all over the country, and fresh local vegetables also reveal new facets when paired with sake or wine.

  • Sashimi of Seasonal White Fish: For sashimi, where the delicate flavor of the ingredient is paramount, a dry Ginjo or Honjozo is ideal. It enhances the fish's sweetness while providing a clean finish. For wine, a white wine with fresh citrus aromas, like a Sauvignon Blanc, will elevate the fish's flavor and create a refreshing harmony.
  • Shrimp and Seasonal Vegetable Tempura: For tempura, which features a light batter and the natural taste of the ingredients, warm Junmai sake (nurukan) is a surprisingly good match. The gentle umami of the rice envelops the flavor of the oil, and the warmth spreads through your mouth. For wine, an oaked Chardonnay will complement the tempura's aroma and richness, allowing you to enjoy a complex flavor.
  • Seasonal Vegetable Bagna Càuda: To enhance the sweetness of fresh vegetables and the rich aroma of bagna càuda, we recommend a sparkling Junmai Ginjo sake. The refreshing bubbles stimulate the appetite and further accentuate the vegetables' sweetness. For wine, a light sparkling wine like an Italian Prosecco will add a touch of brilliance to the fresh taste of the vegetables.

In addition to these combinations, we can also suggest the best pairing based on your preferences and the day's catch. Please feel free to ask our staff.

Catering to Your Taste! Tips for Choosing Sake and Wine

We support each and every customer in choosing a sake or wine that suits their individual taste and mood for the day. Here are a few tips for finding that fateful bottle from our numerous selections.

Recommended Brands and How to Choose for Sake Beginners

There are so many types of sake, I don't know which one to choose... Don't worry. We recommend starting with an easy-to-drink type.

  1. Start with a fruity Ginjo sake: Ginjo and Daiginjo sakes, with their brilliant aromas of apple and pear, are very popular even among sake beginners. They have a smooth mouthfeel and a clean finish, making them perfect for a first sake experience.
  2. Experience the umami of rice with Junmai sake: Junmai sake, which allows you to feel the natural sweetness and umami of rice, pairs well with Japanese cuisine in general. It is recommended for those who want to gradually delve into the depths of sake. Its charm lies in how its character changes with temperature, from chilled to room temperature to warm (nurukan).
  3. A toast with sparkling sake: Sparkling sake, enjoyable for its champagne-like bubbles, has a festive appearance and is perfect for a toast. Even those who are not fond of sake will be surprised by its refreshing taste.

Characteristics of Wine Varieties and Food Pairings

Wine also varies greatly in taste depending on the grape variety. Here are some representative varieties, their characteristics, and the dishes they pair well with.

  • Chardonnay (White Wine): Rich, and when oak-aged, it has notes of vanilla and nuts. It pairs well with cream-based dishes, sautéed seafood, and chicken.
  • Sauvignon Blanc (White Wine): Characterized by a refreshing aroma of herbs and grapefruit and a crisp acidity. It pairs well with seafood marinades, salads, and Japanese white fish sashimi.
  • Pinot Noir (Red Wine): Features delicate berry aromas, a light body, and gentle tannins. It pairs well with Japanese cuisine in general, especially Omi beef tataki, duck, and mushroom dishes.
  • Cabernet Sauvignon (Red Wine): Known for its rich fruitiness and powerful tannins. It is an excellent match for meat dishes like beef steak, stews, and game. Please try it with our Omi beef steak grilled on lava rock.

When in doubt, please don't hesitate to ask our staff. We will recommend the perfect bottle to match your preferences and the day's menu. Your new encounter with sake from Yasu or wine will surely become an unforgettable memory.
