Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

How to enjoy Robata

Robata Story

01

A 45 seat room puts you near the fire

Thirteen counter seats, twelve table seats, eight in the private room and twelve on the terrace: 45 in all. In a room this size, the flames and the crackle of the straw reach every seat.

02

Nothing added, just the ingredient

The finished surface carries the smoke of burning straw. Leave the first slice unseasoned and taste the natural sweetness underneath.

03

In winter, cold yellowtail with salt and citrus

Later in the plate, shift with condiments, rock salt and citrus. Winter brings kanburi yellowtail, whose fat loosens and lightens against salt and citrus.

04

A cigarette and a cup, out to the terrace

Every seat, including the twelve on the terrace, allows smoking. Our staff suggest Shiga sake, dry through sweet, to match your sashimi or straw-grilled dish.

Each establishment welcomes customers with its own unique selection of Japanese sake and dishes.

For those thinking, Tonight, I want to fully enjoy seasonal flavors with delicious sake, or I want to find a place where I can chat freely with friends and colleagues, Yasu offers a wealth of attractive options. Fresh seafood, Shiga's prized Omi beef, and seasonal vegetables unique to the time of year—each of these ingredients shines even brighter when paired with carefully brewed Japanese sake. We deeply cherish Yasu's food culture and have made it our mission to provide our customers with the best possible experience.

  • Encounters with Japanese sake from every season
  • Exceptionally fresh seafood and the bounties of Shiga
  • A versatile space for various occasions

In this article, we will introduce the secrets to fully enjoying Japanese sake and seasonal dishes in Yasu, using our restaurant as an example. Through specific information about our restaurant's appeal, we hope you will be inspired to visit and use our services, and that you'll be able to imagine a wonderful evening in Yasu.

Struggling to Find the Ideal Sake and Seasonal Delicacies? The Challenge of Choosing an Izakaya in Yasu

Although there are many options when you search for a Yasu Izakaya, finding a place that is truly satisfying can be surprisingly difficult. For customers who appreciate the depth of Yasu Japanese Sake or value a sense of the season, choosing a restaurant is a careful process.

  1. Anxiety about finding truly delicious sake: You're looking for a pub near Yasu Station, but you're not sure which places are truly knowledgeable about sake or if they'll have brands that suit your taste. When you go out, you want to enjoy a rare sake you can't usually drink or a special, seasonal cup.
  2. A lack of dishes that truly bring out the best in seasonal ingredients: The term Yasu Seafood raises expectations, but will it be truly fresh and served in its prime seasonal condition? Many people are looking for creative dishes that reflect the changing seasons, not just a standardized menu. This is especially true for cooking methods like Yasu Robatayaki, where the quality of the ingredients is paramount to bringing out their simple, natural flavors.
  3. The difficulty of choosing a restaurant for various occasions: For organizers planning a company Yasu Banquet, choosing an izakaya is a big pressure. The needs are diverse: finding a place that can handle large groups, a quiet private room for business entertainment in the Kitano Izakaya area, or ensuring the venue is a Yasu Smoking-Permitted Izakaya. Restaurants that can meet all these demands are limited.

To customers with these concerns, we confidently offer a solution. We value each customer's wish for the perfect place, and we deliver an experience that exceeds expectations with the finest sake, seasonal cuisine, a comfortable space, and excellent service.

Creating Blissful Moments with Seasonal Yasu Japanese Sake and a Seasonal Menu

What we, as a Yasu Izakaya, most want to convey to our customers is the profound depth of expressing the changing seasons through sake and cuisine. We pour our passion into making the most of the blessings of nature that change throughout the year and delivering them to you in their best form.

The Deep Charm of Japanese Sake, Changing with Each Season

To truly appreciate the essence of Yasu Japanese Sake, it's essential to pay attention to seasonal changes. Sake reveals a surprisingly diverse character not only based on the rice variety and brewing method but also on the season it's brewed and the aging period. In spring, fresh and floral new sake brightens the table, while on hot summer days, light and refreshing nama-zake or nigori-zake quenches your thirst. In autumn, aged hiyaoroshi with its rich aroma and mellow taste takes center stage, and in the cold of winter, kanzake (hot sake) or rich, full-bodied sake with increased depth and body warms both body and soul.

  • Spring Sake: Spring is the season for freshly pressed new sake (shinshu) and vibrant nama-zake (unpasteurized sake). With a light cherry blossom-like aroma and a refreshing taste, it pairs perfectly with the delicate, slightly bitter flavors of spring, such as mountain vegetables and spring greens. Enjoy a light, easy-to-drink sake that signals the start of a new season.
  • Summer Sake: In the hot summer, crisp, dry, or slightly sparkling sake served chilled is popular. Its cool finish helps you forget the summer humidity. We recommend pairing it with refreshing Yasu Seafood dishes like carpaccio made with fresh fish direct from the fishing port or light vinegared dishes.
  • Autumn Sake: Autumn is the time for hiyaoroshi or akiagari, sakes known for their mellow, well-rounded character and rich aroma developed through aging. Slowly matured over the summer, these sakes have increased depth and a calm, settled flavor. They are an exceptional match for the rich tastes of autumn, such as fatty returning bonito and Pacific saury, or seasonal mushroom dishes.
  • Winter Sake: In the cold winter, a sake that warms the body with its rich umami and full body is perfect. Warming it to make kanzake further opens up its aroma and deepens its flavor. It creates a blissful moment when paired with hearty dishes like the rich umami of Yasu Omi Beef, winter hot pots, or seafood grilled to perfection over our Yasu Robatayaki grill.

We carefully select and offer the Yasu Japanese Sake that shines brightest in each season. We invite you to experience the harmony created by the unique character of each sake and our seasonal ingredients. If you have a preference, please feel free to ask our staff. We will be happy to recommend the perfect Yasu Japanese Sake for you.

Savoring the Bounties of Shiga with All Five Senses: Fresh Fish Direct from the Port and Yasu Omi Beef

Another pillar of our establishment as a Yasu Izakaya is our unwavering commitment to the freshness and quality of our seasonal ingredients. For customers seeking Yasu Seafood, we serve fresh fish delivered directly from the fishing port, caught that very day. By sourcing directly from fishing ports across Japan, we can offer rare seafood not often found in the market and fish at its absolute peak of flavor. In addition to sashimi, our seafood grilled over the Yasu Robatayaki grill brings out the maximum flavor of the ingredients. The fragrant aroma and concentrated umami make for an outstanding pairing with sake.

  1. Spring's Bounty: Spring brings delicate seafood that signals its arrival, such as cherry blossom sea bream, firefly squid, and Japanese halfbeak. We serve these alongside seasonal vegetables that evoke the breath of spring, like Yasu's unique mountain vegetables and simmered young bamboo shoots, for a colorful and delightful experience.
  2. Summer's Bounty: The hot summer offers an abundance of refreshing seafood like rock oysters, pike conger, horse mackerel, and grunt. These fresh catches are delicious as sashimi, and their flavors are further enhanced when grilled over our Yasu Robatayaki. Grilled summer vegetables also become sweeter and more fragrant, making them a great companion for sake.
  3. Autumn's Bounty: The season of hearty appetites allows you to fully enjoy the umami of fatty fish like returning bonito, Pacific saury, and salmon. Our seared returning bonito, with its rich flavor and deep umami, is an exceptional match for autumn sake. We also prepare exquisite dishes combining seafood with mountain treasures like mushrooms and chestnuts.
  4. Winter's Bounty: The cold winter brings a lineup of culinary kings, including fatty yellowtail, crab, monkfish liver, and fugu (pufferfish). Yellowtail grilled dynamically over our Yasu Robatayaki is irresistible, with its meltingly tender fat and flavorful meat. Another winter delight is Shiga's prized brand of beef, Yasu Omi Beef. Known for its beautiful marbling, melt-in-your-mouth texture, and elegant sweetness, we serve Omi beef seared or grilled robatayaki-style. Indulge in the ultimate luxury that further enhances the flavor of Japanese sake.

We serve these carefully selected ingredients using cooking methods that bring out their best natural qualities. We invite you to try our Seasonal Menu, where you can experience the seasons with your eyes and your palate.
