Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

Service

How to enjoy Robata

Robata Story

01

A 45 seat room puts you near the fire

Thirteen counter seats, twelve table seats, eight in the private room and twelve on the terrace: 45 in all. In a room this size, the flames and the crackle of the straw reach every seat.

02

Nothing added, just the ingredient

The finished surface carries the smoke of burning straw. Leave the first slice unseasoned and taste the natural sweetness underneath.

03

In winter, cold yellowtail with salt and citrus

Later in the plate, shift with condiments, rock salt and citrus. Winter brings kanburi yellowtail, whose fat loosens and lightens against salt and citrus.

04

A cigarette and a cup, out to the terrace

Every seat, including the twelve on the terrace, allows smoking. Our staff suggest Shiga sake, dry through sweet, to match your sashimi or straw-grilled dish.

Producers

This time, for organizers searching for a private izakaya in Yasu, we will introduce how to elevate your banquet with wine pairing and detail the special experience our establishment offers.

To everyone searching with the keyword Yasu Private Izakaya, this column will surely help you succeed as an organizer and create an evening where all participants are truly satisfied.

What Challenges Do Organizers Face When Choosing a Private Izakaya in Yasu?

Many who search for Yasu Organizer Izakaya undoubtedly wish for their banquets and dinners to be a resounding success. However, when choosing a private izakaya, several common concerns often arise:

  • Balance of Food and Drinks: Can a menu of food and drinks be provided that satisfies everyone, given diverse participant preferences? Especially, are there many izakayas where authentic wine pairing can be enjoyed?
  • Comfort of the Private Space: Does it offer not just private rooms, but also a comfortable space that maintains a sense of privacy, without being too large or too small?
  • Transparency of Budget and Course Content: Will it provide content that exceeds expectations within the budget? Can it be used with peace of mind, without worrying about additional charges?
  • Reducing the Organizer's Burden: How much support will the establishment provide from preparation to the day of the event? Can the event proceed smoothly without much effort?

These questions and anxieties are crucial when selecting a private izakaya. While there are many choices for Yasu Station dining, finding a private venue that also offers wine pairing can be challenging. However, please rest assured. Our establishment will resolve all these concerns for organizers and help you achieve a truly memorable banquet.

The Charm of Wine Pairing: Beyond the Izakaya Concept

Many people might associate izakaya primarily with beer, sake, or shochu. Of course, these are certainly part of an izakaya's appeal. However, what our establishment aims for is a new possibility for a Private Izakaya in Yasu. We offer wine pairing—selecting the optimal wine to complement each dish and creating a synergistic effect that inspires emotion—all within the familiar setting of an izakaya. This will undoubtedly be an experience of new discovery and joy for all participants.

The Marriage of Wine and Cuisine Proposed by Yasu's Private Izakaya

Our establishment in Yasu strives to overturn the conventional image of a Yasu Izakaya by thoroughly pursuing the perfect compatibility between ingredients and wine. In particular, the combination of superb local Yasu ingredients—such as Shiga's proud Omi beef and the rich bounty of seafood from Lake Biwa and the Sea of Japan—with wine promises an unforgettable culinary experience for our guests.

Omi Beef and Red Wine: A Blissful Encounter

Omi beef, Shiga Prefecture's treasure, with its finely marbled texture and melt-in-your-mouth umami, is a delicacy truly befitting a special occasion. We offer Omi beef prepared in various ways, suggesting the optimal red wine for each:

  • Omi Beef Steak with Full-Bodied Red Wine: For the rich umami of succulent red meat, a full-bodied red wine with firm tannins, such as Cabernet Sauvignon or Syrah, is ideal. The powerful aroma and flavor of the wine further enhance the profound taste of Omi beef.
  • Omi Beef Roast Beef with Medium-Bodied Red Wine: For tenderly roasted beef, a light and fruity medium-bodied red wine like Pinot Noir or Merlot pairs wonderfully. It creates an elegant harmony without overpowering the delicate flavors of the meat.
  • Omi Beef Shigure-ni with Light Red Wine: Even with Japanese-style seasoning, wine shows remarkable compatibility. Pairing it with a light red wine, or one served slightly chilled, enhances both flavors.

Savoring the profound depths of Omi beef slowly with wine in a private setting—this is truly the best opportunity to experience the essence of Omi Beef in Yasu.

The Magic of White Wine Enhancing Seasonal Seafood

When you hear Yasu Seafood, you likely imagine fresh catches. Our establishment uses an abundance of seasonal fresh fish directly sourced from the Sea of Japan, as well as blessings from Lake Biwa. The combination of seafood and white wine is truly a classic marriage.

  • Fresh Sashimi/Carpaccio with Crisp Dry White Wine: For the delicate flavors of fresh seafood, a mineral-rich and crisp dry white wine like Sauvignon Blanc or Chablis is perfect. It further accentuates the umami of the seafood and refreshes the palate.
  • Seafood Ajillo/Grill with Barrel-Aged White Wine: For dishes with a bit more richness, a barrel-aged white wine such as Chardonnay pairs wonderfully. It harmonizes with butter and herb flavors, creating a rich taste.
  • Seafood Fritto/Tempura with Sparkling Wine: For fried dishes, sparkling wine with fine bubbles is highly recommended. It cleanses the palate from oiliness and leaves a refreshing sensation. The key is to choose wines like Champagne or Prosecco according to the lightness or richness of the dish.

We pair seasonal seafood, at its peak freshness, with the ideal wine of the day. Because our space is private, our expert staff can suggest the best wines tailored to your preferences and the theme of your gathering.

The Freedom of Wine Pairing Expanded by Private Dining

The greatest appeal of private dining is the high degree of freedom it offers. You can savor wine and cuisine at your own pace, without worrying about other guests. At our establishment, we provide special services unique to a Private Izakaya in Yasu, such as preparing a customized wine list and offering wine explanations by a sommelier, all according to your requests.

  • Themed Wine Selection: We select and propose wines according to your theme, such as I want to enjoy red wines primarily, I want to compare white wines, or I want to taste wines from a specific country.
  • Wine Tasting Opportunities: If you consult us at the time of reservation, it's possible to sample several wines beforehand. This makes wine selection on the day of your event smoother.
  • Expert Staff Explanations: Our knowledgeable wine staff will carefully explain the characteristics of each wine and its compatibility with the dishes. Even wine beginners can confidently enjoy the profound world of wine.

Such meticulous service is rarely experienced at a typical izakaya. It is precisely because of the private setting that you can deepen your knowledge of wine and enrich conversations with your companions even further.
