Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

Service

01

Robata & Warayaki

Bonito from Kochi and Omi beef from Shiga, grilled over straw right before you. Seasonal fish and vegetables draw out their fullest flavor over charcoal.

02

Sake & Local Brews

A generous selection of sake chosen from across Japan, including local Shiga brews — from dry to sweet. Our staff suggest the one glass that suits your dish, so you can enjoy sake tasting in Yasu.

03

Seafood & Sashimi

Fresh fish shipped straight from the port, finished into sashimi by skilled hands. Enjoy the seafood of Yasu in seasonal plates such as our five-kind sashimi platter.

04

Omi Beef & Omi Chicken

Shiga's specialty Omi beef, straw-grilled or miso-marinated, and overnight-dried Omi chicken. Enjoy Shiga's premium ingredients dynamically over charcoal in Yasu.

05

Private Rooms & Banquets

Relaxing private rooms, banquet courses with free-flow drinks, and full-venue bookings on request. Steps from Yasu Station — ideal for company parties and gatherings.

How to enjoy Robata

Robata Story

01

A 45 seat room puts you near the fire

Thirteen counter seats, twelve table seats, eight in the private room and twelve on the terrace: 45 in all. In a room this size, the flames and the crackle of the straw reach every seat.

02

Nothing added, just the ingredient

The finished surface carries the smoke of burning straw. Leave the first slice unseasoned and taste the natural sweetness underneath.

03

In winter, cold yellowtail with salt and citrus

Later in the plate, shift with condiments, rock salt and citrus. Winter brings kanburi yellowtail, whose fat loosens and lightens against salt and citrus.

04

A cigarette and a cup, out to the terrace

Every seat, including the twelve on the terrace, allows smoking. Our staff suggest Shiga sake, dry through sweet, to match your sashimi or straw-grilled dish.

The Challenge of Finding Truly Delicious Food: Your Concerns When Choosing an Izakaya in Yasu

Have you ever felt, I want to eat something delicious, but I don't know which restaurant is good? or I can't find a smoking-permitted izakaya that offers high-quality cuisine? Especially in areas like Yasu, it can surprisingly be difficult to find an izakaya among the many options that truly focuses on ingredients and provides the service you seek. Dining becomes a much richer experience when you not only enjoy the food but also understand where the ingredients come from and how they are prepared. Furthermore, for those organizing important dinners or Yasu banquet courses, choosing a restaurant that satisfies everyone is a significant challenge. Where can one find an izakaya in Yasu where you can safely enjoy high-quality Omi Beef, fresh seafood, and seasonal vegetables? To meet our customers' desires to know and experience, we strive daily in our operations.

Our Smoking-Friendly Izakaya in Yasu: Five Commitments to Ingredients

Our restaurant is dedicated to providing a truly satisfying dining experience, with a particular focus on the following five points. We promise to exceed your expectations not only in comfort as a smoking-friendly izakaya in Yasu but also in the quality of our cuisine.

Carefully Selected Omi Beef: A Blissful Delicacy to Savor in Yasu

Omi Beef, considered one of Japan's top three Wagyu brands, is characterized by its fine marbling and melt-in-your-mouth fat sweetness. We carefully select and source only the highest quality Omi Beef. Our experienced connoisseurs build trusted relationships with producers, hand-picking only the freshest and best-condition cuts. We pay meticulous attention to preparation methods to bring out the inherent deliciousness of Omi Beef to its fullest. Whether it's steak, seared (aburi), or tataki, we apply the best cooking techniques tailored to the unique characteristics of each cut, delivering it to your table. It is our great pleasure for you to fully enjoy Omi Beef in Yasu.

  • Commitment to Quality: Among the Omi Beef proudly produced in Shiga Prefecture, we primarily select A4 rank or higher, focusing on cuts with fine marbling and deep umami.
  • Transparency in Sourcing: By directly sourcing from trusted contract farms, we thoroughly manage safety and quality, from the cattle's rearing environment to their distribution.
  • Diverse Cooking Methods: We offer cooking methods that highlight the individuality of each cut, such as enhancing the sweet fat of the sirloin in a steak, the rich flavor of red meat in tataki, or the savory aroma of ribs when seared.

Direct from the Fishing Port! Seasonal Fresh Fish Gracing Yasu's Dining Tables

To deliver the bounty of the sea to our customers as fresh as possible, we source fresh fish directly from trusted fishing ports every morning. The fish landed each day varies, making every encounter a unique, once-in-a-lifetime experience. Our skilled chefs assess the fish's condition and prepare it in the most delicious way, whether as sashimi, grilled, or simmered. Enjoy the taste of the season, fresh with the scent of the sea. We will not disappoint customers looking for fresh seafood at an izakaya in Yasu.

  • Morning Catch Direct Delivery: Beyond the blessings of Lake Biwa, we also source fresh seafood from the Sea of Japan on the same day, bringing it to your table. The fish species change with the seasons, making every day a new discovery.
  • Expert Eye: Our experienced chefs comprehensively judge the firmness, color, luster, and aroma of the fish, selecting only those in peak condition.
  • Simple Preparation to Maximize Ingredients: To bring out the best in fresh fish, we avoid excessive seasoning, focusing on preparations like sashimi or salt-grilled dishes that allow you to savor the natural taste of the ingredients.

The Savory Delights of Seasonal Vegetables and Local Sake, Nurtured by Yasu's Land

Vegetables, which enrich the color and flavor of our dishes, are another area of our commitment. We source the most delicious seasonal vegetables from contract farmers in and around Yasu. Vegetables nurtured by the scent of the soil and the blessings of the sun are fresh and robust in flavor. These vegetables pair exceptionally well with Omi Beef and fresh fish, balancing the overall dish. Moreover, Shiga Prefecture boasts a rich variety of local sakes nurtured by its abundant nature. Choosing a local sake to complement your meal will allow you to enjoy an even deeper, more complex flavor.

  • Collaboration with Local Farmers: We directly contract with farmers in Yasu City and its vicinity to source freshly harvested organic and specially cultivated vegetables.
  • Seasonal Bounty: We incorporate seasonal vegetables into our menu, such as bamboo shoots and wild greens in spring, eggplant and tomatoes in summer, mushrooms and root vegetables in autumn, and daikon radish and turnips in winter.
  • Sake and Food Pairing: We offer a wide selection of local sakes carefully crafted by breweries in Shiga Prefecture, suggesting optimal pairings with our vegetable and fish dishes.
