Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

Service

01

Robata & Warayaki

Bonito from Kochi and Omi beef from Shiga, grilled over straw right before you. Seasonal fish and vegetables draw out their fullest flavor over charcoal.

02

Sake & Local Brews

A generous selection of sake chosen from across Japan, including local Shiga brews — from dry to sweet. Our staff suggest the one glass that suits your dish, so you can enjoy sake tasting in Yasu.

03

Seafood & Sashimi

Fresh fish shipped straight from the port, finished into sashimi by skilled hands. Enjoy the seafood of Yasu in seasonal plates such as our five-kind sashimi platter.

04

Omi Beef & Omi Chicken

Shiga's specialty Omi beef, straw-grilled or miso-marinated, and overnight-dried Omi chicken. Enjoy Shiga's premium ingredients dynamically over charcoal in Yasu.

05

Private Rooms & Banquets

Relaxing private rooms, banquet courses with free-flow drinks, and full-venue bookings on request. Steps from Yasu Station — ideal for company parties and gatherings.

How to enjoy Robata

Robata Story

01

A 45 seat room puts you near the fire

Thirteen counter seats, twelve table seats, eight in the private room and twelve on the terrace: 45 in all. In a room this size, the flames and the crackle of the straw reach every seat.

02

Nothing added, just the ingredient

The finished surface carries the smoke of burning straw. Leave the first slice unseasoned and taste the natural sweetness underneath.

03

In winter, cold yellowtail with salt and citrus

Later in the plate, shift with condiments, rock salt and citrus. Winter brings kanburi yellowtail, whose fat loosens and lightens against salt and citrus.

04

A cigarette and a cup, out to the terrace

Every seat, including the twelve on the terrace, allows smoking. Our staff suggest Shiga sake, dry through sweet, to match your sashimi or straw-grilled dish.

Choosing an Izakaya in Yasu: The Appeal of the Chef's Omakase Course

To everyone searching for an izakaya in the Yasu area: How do you find a truly satisfying restaurant?

For those of you looking for an izakaya in the Yasu area, finding that one perfect spot among countless options can be a delightful challenge. It's only natural to want to create the best memories with your loved ones, complemented by delicious food and warm hospitality. Our restaurant strives every day to meet those expectations.

From a drink after work to family dinners, gatherings with friends, important business receptions, and anniversary celebrations, the term Yasu izakaya encompasses a wide range of uses. However, when it comes to choosing a place, there are many factors to consider, such as the variety on the menu, price range, atmosphere, and even the quality of the ingredients.

You certainly want to avoid disappointment during a special dinner or banquet. What criteria should you use? Where can you find a place that not only serves delicious food but also offers a memorable experience? Many of you may have these questions. It's understandable to be cautious when choosing a restaurant, especially for a first visit or when hosting important guests. To answer your need for what to know and what's helpful, we would like to introduce the appeal of our omakase course, prepared with heart and soul by our head chef.

The essence of a Yasu Izakaya! The dedication behind the chef's Seasonal Omakase Course.

What we proudly recommend is our Seasonal Omakase Course, which our head chef designs specifically for you based on the day's market finds and the changing seasons. This course is more than just a series of dishes; it's a concentration of the chef's profound philosophy and heartfelt hospitality towards our guests.

A Commitment to Select Ingredients: Seasonal Yasu Seafood and Local Vegetables

  • An Uncompromising Pursuit of Freshness and Quality
Every morning, our head chef visits the market to hand-pick only the best ingredients of the day. For our Yasu Seafood, we actively incorporate not only seasonal freshwater fish from Lake Biwa but also fresh ocean delicacies delivered directly from the Sea of Japan. Each type of seafood is prepared using the optimal cooking method for its kind and condition to maximize its natural umami flavor. Morning-harvested vegetables from local partner farms are another vital element that brightens our course. We use an abundance of fresh, seasonal vegetables so you can taste the changing of the seasons.

  • Savoring the Bounties of Shiga with All Five Senses
In our omakase course, you can fully enjoy the rich natural blessings that Shiga Prefecture has to offer. For instance, special ingredients that can only be enjoyed at certain times of the year make their appearance: bamboo shoots and wild mountain vegetables in spring, Kamo eggplant and Manganji peppers in summer, mushrooms and chestnuts in autumn, and crab and fugu in winter. These ingredients are elevated into visually stunning dishes by the chef's expert techniques.

The Art of Yasu Robatayaki: A Masterpiece of Fragrance and Concentrated Umami

  • Bringing Out the Ultimate Flavor with Binchotan Charcoal
One of our specialties is Robatayaki. The head chef personally grills carefully selected seafood, meat, and vegetables over Binchotan charcoal in the irori hearth right before your eyes. The far-infrared effect of Binchotan charcoal makes the surface of the ingredients crispy and fragrant, while the inside remains plump and juicy. This traditional cooking method not only seals in the umami of the ingredients but also imparts a unique smokiness from the charcoal, creating a dish that stimulates all five senses.

  • At the Counter Seats, Filled with a Live Atmosphere
With robatayaki, the cooking process itself is entertainment. From the counter seats, you can watch the chef grill the ingredients right in front of you. The crackling sound of the charcoal, the rising fragrant smoke, and the vivid transformation of the ingredients will liven up your conversation and enrich your dining experience. This is the true pleasure of experiencing the vibrancy and craftsmanship of a Kitano Izakaya up close.

Perfect Pairings with Yasu Sake

  • Specially Selected Local Sake to Enhance the Cuisine
We offer a selection of sake carefully chosen by the head chef to complement each dish of the omakase course. Centered on local brews from Shiga, we also feature renowned sake from across the country, and we will recommend the best one to match the season and your meal. The diverse profiles of sake—from rich to dry, from fragrant to crisp—further enhance the flavors of the cuisine.

  • Discover Something New with Guidance from Our Sake Sommelier
Our restaurant has a certified sake sommelier on staff. They will not only suggest the best pairings for your course after listening to your preferences but will also happily explain the charms of sake to newcomers in an easy-to-understand way. Discovering a new sake is sure to make your dining experience even more special. Please enjoy the marriage of food and sake.
