Our story
Located in the heart of Yasu, Shiga, Uomaru is a seafood izakaya where fresh fish and carefully selected sake meet the craft of robatayaki grilling.
Sashimi finished by skilled hands from fish delivered straight from the port, bonito from Kochi, and Omi beef from Shiga — grilled dynamically right before you over straw and charcoal.
A calm Japanese space with lively counter seats and relaxing private rooms — for dates, family dinners, and company banquets alike.
Commitment
In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.
Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.
We use straw hand-cut ourselves from vast contracted fields in Shiga. Dried straw burns hot with the finest smoky aroma.
Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.
Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.
A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

How to enjoy Robata
How to enjoy straw-grilling and robata
Thirteen counter seats, twelve table seats, eight in the private room and twelve on the terrace: 45 in all. In a room this size, the flames and the crackle of the straw reach every seat.
The finished surface carries the smoke of burning straw. Leave the first slice unseasoned and taste the natural sweetness underneath.
Later in the plate, shift with condiments, rock salt and citrus. Winter brings kanburi yellowtail, whose fat loosens and lightens against salt and citrus.
Every seat, including the twelve on the terrace, allows smoking. Our staff suggest Shiga sake, dry through sweet, to match your sashimi or straw-grilled dish.

Column
Here in Yasu City, Shiga Prefecture, we are dedicated to providing all our guests with delicious food and a wonderful time. With this in mind, our restaurant remains committed to sourcing port-fresh fish directly from trusted fishing ports every morning. The rich flavor, melt-in-your-mouth texture, and profound taste that only seasonal, fresh seafood can offer is truly a blissful experience. However, we are also keenly aware that some customers cannot fully enjoy these wonderful ocean bounties due to concerns about allergies.
For those looking for an izakaya in Yasu, especially event organizers planning group gatherings, banquets, or special occasions with private bookings, a safe dining environment for all participants is a crucial factor. At our restaurant, we take thorough measures to ensure that guests with allergies can also fully enjoy their meals, while we bring out the best in our port-fresh fish. In this article, we will focus on our allergy support and detail the specific methods and commitments we have in place so that everyone can dine with peace of mind.
For those considering a private izakaya booking in Yasu or a Yasu banquet course, and for organizers struggling to choose an izakaya, we are confident this information will be helpful. Because allergies are a delicate and individual issue, we address them with sincerity and spare no effort to see our customers smile.
Dishes made with fresh, port-fresh fish are one of the essential joys of Japanese food culture. However, there are many types of seafood, each potentially containing different allergens. Allergies can range widely, from specific types of fish to crustaceans (shrimp, crab) and shellfish (abalone, turban shell, squid, octopus). For those with these allergies, dining out can sometimes be a source of great anxiety. Many hesitate to dine out due to worries like, What if I accidentally consume an allergen? or Will I be a bother to the restaurant?
Especially for organizers planning banquets or private group events in Yasu, accommodating participants with allergies is a critical responsibility. Ensuring that all attendees can eat safely and enjoyably is the key to a successful event. It's impossible to feel at ease using a restaurant where allergy information is unclear on the menu or where individual accommodations are difficult to make.
We strongly desire to overcome this allergy barrier and have all our customers fully savor the deliciousness of our port-fresh fish. To achieve this, we sincerely address each customer's allergy information, seeking and implementing all possible accommodations. In the next section, we will introduce the five pillars of our allergy support as concrete solutions.
In modern society, food allergies are by no means uncommon. People of all ages, from children to adults, can show sensitive reactions to specific allergens. Seafood, in particular, contains a wide variety of proteins and is often a cause of allergies. In light of this situation, we believe it is our mission as an izakaya in Yasu to provide an environment where customers can dine with peace of mind. We believe that thorough consideration for our customers' health and safety, beyond just serving delicious food, is essential to earning their trust.
We position our allergy support not merely as a part of our service, but as a crucial foundation for building a relationship of trust with our customers. To alleviate our customers' anxieties and allow them to enjoy their meals from the heart, our entire staff acquires specialized knowledge and applies it in their daily work. To provide the best izakaya experience in Yasu, allergy support is a critical theme on which we will never compromise.
At our restaurant, we take a multi-faceted approach to allergy support so that you can enjoy the deliciousness of our port-fresh fish with peace of mind. Here, we introduce five particularly important pillars.
The port-fresh fish that arrives at our restaurant is managed with the utmost care, not only for its freshness but also for allergen information. From the procurement stage, we have established a management system to clearly record and track which fish arrive from which port and in what condition.
The type and severity of allergies vary from customer to customer. We emphasize individual consultation and support tailored to each person's situation, rather than a one-size-fits-all approach.
The allergy information we receive from customers is shared throughout the kitchen, and meticulous care is taken during the cooking process.
For effective allergy support, it is crucial that all employees, including serving staff and kitchen staff, share a common awareness and knowledge.
While we pride ourselves on our port-fresh fish, we also want to provide the best dining experience as a Yasu izakaya for customers with non-seafood allergies or those who simply do not care for seafood.
To ensure you can safely enjoy our port-fresh fish and other dishes, receiving information from you is extremely important. Here are the specific practical steps.
The most important thing is to let us know about any allergies as early as possible. Especially for groups using the Yasu banquet course or private izakaya booking in Yasu services, if the organizer can provide a consolidated list of all participants' allergies at the time of booking, our preparations will go much more smoothly.
Instead of just saying fish allergy, providing specific details about the allergen will lead to a more accurate response.
After you place your order and before we begin cooking, our staff will once again conduct a final confirmation of your allergy information, the corresponding menu items, and the cooking methods.
Dishes prepared with allergy considerations may be served with a special marker. This allows you to confirm for yourself and eat with confidence.
Through these steps, and with cooperation between our customers and our restaurant, we will continue to build an environment where all guests can safely enjoy our delicious cuisine, including our port-fresh fish.
As an izakaya in Yasu City, Shiga Prefecture, dedicated to providing delicious food and warm hospitality, we are passionate about delivering the full charm of our port-fresh fish. However, this passion is supported not just by the freshness and taste of our ingredients, but by a strong desire to provide safety and joy to all our customers. Our allergy support is one of the most important initiatives to realize this desire.
We will never forget our sincere commitment to each customer's food safety and will always continue to pursue the best service. We take meticulous care in every detail, from sourcing and cooking ingredients to serving our guests, so you can enjoy our port-fresh fish with confidence. For Yasu event organizers wondering where to dine, for customers looking for a Yasu banquet course or a private izakaya booking in Yasu for large groups, and for gourmands who want to taste Yasu Omi beef, we confidently recommend our restaurant.
Whether you have allergies or not, our entire staff will serve you with all our hearts to ensure that your time with us becomes an unforgettable, wonderful memory. Please feel free to consult with us when making a reservation or upon your visit. We sincerely look forward to welcoming you.
Our greatest joy is seeing our customers smile. We promise to make your night in Yasu richer and more enjoyable through safe and delicious food.
