Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

How to enjoy Robata

Robata Story

01

A 45 seat room puts you near the fire

Thirteen counter seats, twelve table seats, eight in the private room and twelve on the terrace: 45 in all. In a room this size, the flames and the crackle of the straw reach every seat.

02

Nothing added, just the ingredient

The finished surface carries the smoke of burning straw. Leave the first slice unseasoned and taste the natural sweetness underneath.

03

In winter, cold yellowtail with salt and citrus

Later in the plate, shift with condiments, rock salt and citrus. Winter brings kanburi yellowtail, whose fat loosens and lightens against salt and citrus.

04

A cigarette and a cup, out to the terrace

Every seat, including the twelve on the terrace, allows smoking. Our staff suggest Shiga sake, dry through sweet, to match your sashimi or straw-grilled dish.

Producers

Yasu Robatayaki: Discover the Exquisite Flavors of the Season

The Charm of Yasu Robatayaki: A Supreme Dining Experience for Body and Soul

For those thinking, I want to eat something delicious tonight, or I want to spend some quality time talking with friends, if you're looking for robatayaki in Yasu, please come to our restaurant. We are dedicated to our ingredients daily to deliver the best dining experience that satisfies both body and soul. The seasonal delicacies grilled dynamically before your eyes, the fragrant aroma of charcoal, and the exquisite dishes woven by our chefs' expert skills will surely create a memorable moment for you.

  • Our specialty Yasu robatayaki begins with providing carefully selected seasonal ingredients in their best condition.
  • In particular, the fresh fish delivered directly from the fishing port is characterized by unparalleled freshness and rich flavor.
  • Enjoy heartfelt conversations with loved ones or lively banquets to your heart's content in a warm atmosphere.

Our Passion for Robatayaki

Robatayaki is a traditional Japanese food culture and a simple yet profound cooking method that brings out the best in ingredients. We are proud to bring this wonderful food culture to everyone in Yasu. The moment our customers take a bite and smile, saying delicious, is our greatest joy. With gratitude for each ingredient and sincerity towards our customers, we light the fire today and await your visit.

Exquisite Yasu Robatayaki Crafted with Fresh Fish Direct from the Port

A major pillar of our Yasu robatayaki is, without a doubt, our fresh fish direct from the fishing port. We have built long-standing relationships with trusted fishermen and brokers, allowing us to source vibrant seafood directly, just landed that morning. This minimizes the time loss of going through a market, enabling us to deliver fish of outstanding freshness to your table.

  • Every morning, we carefully select and source seafood from the optimal fishing port based on the day's weather and catch conditions.
  • For example, we offer seasonal fish such as red sea bream raised in the rich currents of the Seto Inland Sea and fatty tilefish caught in the Sea of Japan.
  • We present the day's recommended fresh fish to our customers, serving it in its most delicious state.

Our Commitment to Maintaining Living Freshness

Seafood arriving from the port is immediately transferred to our in-house fish tank. The fish swimming lively in the tank are a testament to their living freshness. Upon receiving your order, our skilled chefs expertly prepare the fish before grilling it on the robata. This entire process is our unwavering commitment to maximizing the fish's natural umami. The far-infrared effect of the charcoal fire cooks the fish slowly, resulting in crispy, fragrant skin and a plump, juicy interior.

Encounters with Seasonal Fish

The taste and characteristics of seafood vary greatly with the seasons. Spring brings cherry sea bream and Japanese halfbeak; summer offers rock oysters and abalone; autumn features returning bonito and saury; and winter showcases yellowtail and crab. These seasonal bounties of the sea take center stage in our robatayaki. You can enjoy these seasonal delicacies as sashimi to savor their pure flavor, or as charcoal-grilled robatayaki to relish their fragrant aroma. We hope you can feel the rich seasons of Japan through our Yasu robatayaki.

The Magic of Charcoal: Techniques to Maximize Ingredient Flavor

Our Yasu robatayaki is not only about the finest, handpicked ingredients but also about our extraordinary commitment to the cooking method. In particular, the magic of charcoal using Binchotan is the secret to bringing out the maximum umami of the ingredients. Binchotan charcoal has a stronger heat and superior far-infrared effect compared to regular charcoal, allowing it to quickly sear the surface of the food while slowly heating the interior, locking in the delicious flavors.

  • We use carefully selected Binchotan charcoal to grill ingredients evenly with a stable heat.
  • Our chefs' delicate techniques shine as they assess the state of the ingredients, turning skewers and adjusting the heat.
  • Not just seafood, but also seasonal vegetables and select meats are transformed into something incredibly delicious through robatayaki.

The Chef's Five Senses at Play

The real thrill of robatayaki is the immersive experience of watching a chef grill ingredients right before your eyes. The degree of cooking, the rising aroma of the smoke, the crackling sound, and the changing colors of the food—our chefs use all five senses to determine the perfect moment to serve. They respect the individual characteristics of each ingredient, such as the thickness of the fish, its fat content, and the moisture in vegetables, grilling each item carefully until it reaches its most delicious state. The unique smoky fragrance born from charcoal is a charm exclusive to robatayaki that cannot be replicated by other cooking methods.

The Depth of a Simple Cooking Method

Robatayaki is a simple cooking method that enhances the natural flavor of the ingredients without unnecessary additions. However, this simplicity is packed with the profound knowledge and experience of our chefs. We do more than just grill. We offer robatayaki with meticulous attention to detail, from preparing the ingredients to the amount of salt and the timing of the grilling. For fresh fish, for example, we pursue the optimal grilling method for each type, such as using high heat to make the skin crispy while keeping the flesh plump and moist. Our Yasu robatayaki is a true masterpiece, filled with respect for the ingredients and the passion of our chefs.
