Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

Service

01

Robata & Warayaki

02

03

Seafood & Sashimi

Fresh fish shipped straight from the port, finished into sashimi by skilled hands. Enjoy the seafood of Yasu in seasonal plates such as our five-kind sashimi platter.

04

Omi Beef & Omi Chicken

Shiga's specialty Omi beef, straw-grilled or miso-marinated, and overnight-dried Omi chicken. Enjoy Shiga's premium ingredients dynamically over charcoal in Yasu.

05

How to enjoy Robata

Robata Story

01

A 45 seat room puts you near the fire

Thirteen counter seats, twelve table seats, eight in the private room and twelve on the terrace: 45 in all. In a room this size, the flames and the crackle of the straw reach every seat.

02

Nothing added, just the ingredient

The finished surface carries the smoke of burning straw. Leave the first slice unseasoned and taste the natural sweetness underneath.

03

In winter, cold yellowtail with salt and citrus

Later in the plate, shift with condiments, rock salt and citrus. Winter brings kanburi yellowtail, whose fat loosens and lightens against salt and citrus.

04

A cigarette and a cup, out to the terrace

Every seat, including the twelve on the terrace, allows smoking. Our staff suggest Shiga sake, dry through sweet, to match your sashimi or straw-grilled dish.

Enjoy Yasu Seafood with Confidence: Our Commitment to Allergy-Friendly Dining

Welcome to our restaurant in Yasu, where we offer the seasonal bounties of the sea. We greet you with exquisite Yasu seafood dishes crafted from fresh fish delivered directly from the fishing port, and warm hospitality. Our Yasu robatayaki, which highlights the freshest seafood, brings out the maximum natural flavor of the ingredients and pairs exceptionally well with Yasu sake. Many of our customers use our establishment as a place to chat with friends or for Yasu banquets to celebrate special moments with loved ones. Furthermore, as a smoking-friendly izakaya in Yasu, we ensure that all our guests can relax and enjoy their time.

However, when dining out, food allergies can sometimes cast a shadow over the joy of a meal. Perhaps you've worried, What if there's something I can't eat due to my allergies, despite all this delicious food? or, as an event organizer, How can I ensure my friends with allergies don't feel like a burden during our large Yasu banquet? We understand these are valid concerns for many of our customers.

At our restaurant, we strongly believe that every customer should be able to enjoy their meal to the fullest. Therefore, in this article, we will provide a detailed look at our specific initiatives for handling food allergies. We hope this helps you enjoy our Yasu seafood with peace of mind and spend a delightful time filled with smiles.

Savoring the Charm of Yasu Seafood with Peace of Mind

While our fresh seafood is a major draw, seafood itself can be a source of various allergens. The types are diverse, including crustaceans (shrimp, crab), mollusks (squid, octopus), and specific fish species. Additionally, seasonings and processed ingredients used in cooking may contain common allergens like eggs, wheat, and dairy products. For this reason, it's not uncommon for customers to feel a bit anxious when choosing from the menu, wondering, This looks delicious, but will it be safe for me?

It is truly disheartening for us when a customer cannot fully enjoy their meal due to allergy concerns after taking the time to visit us. We don't want you to eat our special Yasu seafood dishes while feeling anxious. We view our allergy support not merely as an obligation, but as an essential part of our hospitality. Our greatest joy is to provide a time when all our customers can gather around delicious food safely and with a smile.

For organizers of Yasu banquets, in particular, confirming attendees' allergies and communicating them to the restaurant is a crucial role. We strive to provide meticulous support to meet these needs. We have established a system where you can consult with us confidently, and our entire staff works together to ensure everyone can enjoy their meal without worry.

For Our Customers' Smiles! Our Specific Allergy-Friendly Measures

To ensure our customers can safely enjoy our Yasu seafood dishes, we have implemented the following specific measures. We continually strive to deliver the best dining experience to everyone who visits us.

Careful Consultation When Booking and Upon Arrival

  • When you make a reservation or upon your arrival, our staff will carefully ask you about any food allergies. We inquire not only about specific allergens but also about the symptoms you have experienced and your preferences for alternative options.

  • For Yasu banquets, we ask the organizer to confirm allergy information for all attendees in advance and share it with us. This allows for a smooth service on the day of the event and ensures we can provide safe Yasu seafood dishes for everyone.

  • The allergy information we gather is shared among all employees, including the kitchen staff, to ensure we are fully prepared to offer the most suitable menu for each individual customer.

Thorough Management, from Sourcing Fresh Fish to Cooking

  • We manage our pride, the fresh fish delivered directly from the fishing port, with the utmost care, not only for its freshness and quality but also to minimize the risk of allergen contamination. From the sourcing stage, we are committed to using only ingredients from trusted suppliers and avoiding any with unclear allergen information.

  • During preparation, we make every effort to use separate cooking utensils, cutting boards, and knives when preparing meals for customers with allergies. We also take measures to prevent cross-contamination by designating separate cooking areas. Even when preparing our Yasu robatayaki, we carefully consider the placement and cooking order of ingredients to minimize contact with allergens.

  • Our kitchen staff regularly undergoes training to improve their knowledge and awareness of allergy management, ensuring they are always equipped to respond appropriately based on the latest information.

Menu Development and Labeling Initiatives

  • On our menu, we strive to display allergen information as clearly as possible for the 7 major allergens (egg, milk, wheat, buckwheat, peanut, shrimp, crab) and the 21 recommended items. This allows customers to check for allergens themselves and choose their dishes with confidence.

  • For limited-time menus and special dishes using seasonal ingredients, we have a system in place to quickly confirm and accurately convey allergen information to our customers. Please do not hesitate to ask our staff if you have any questions.

  • When suggesting pairings with our Yasu sake, we also provide information on allergens in the dishes, allowing you to enjoy the marriage of food and drink with greater peace of mind.

Allergy-Friendly Menu Examples to Enjoy with Yasu Robatayaki & Sake

We are flexible in our approach to ensure that customers with allergies can fully enjoy our Yasu seafood and other specialty dishes. Here are a few examples of how we accommodate specific allergies.

Alternatives for Customers with Seafood Allergies

  • For customers allergic to seafood, we can suggest meat dishes, including Shiga Prefecture's renowned Omi beef, or dishes made with an abundance of fresh, seasonal vegetables. For example, instead of seafood for our Yasu robatayaki, we can offer simply grilled meat or vegetables, flexibly catering to your preferences.

  • If you are booking a Yasu banquet course and some guests have specific seafood allergies, we can arrange for a special alternative menu for them if you consult with us in advance. We provide meticulous care to ensure every participant can enjoy the banquet with a smile.

Accommodating Specific Seasoning Allergies

  • For customers with allergies to specific seasonings such as soy sauce, miso, eggs, or dairy products, we can offer dishes prepared with alternative seasonings or cooking methods that avoid them. We can create dishes that balance health and flavor, such as simple salt-grilled items that maximize the ingredient's natural taste, or steamed dishes flavored with lemon and herbs.

  • We can also provide allergen-free dressings and sauces or, upon request, change them to something simple like oil, salt, and pepper.

Consideration as a Smoking-Friendly Izakaya in Yasu

  • As a smoking-friendly izakaya in Yasu, we provide a comfortable space for customers who smoke. At the same time, out of consideration for guests who are sensitive to smoke, we have taken steps to ensure a pleasant environment, such as by designating smoking and non-smoking areas or installing air purifiers.

  • While not directly related to allergies, we appreciate your understanding that this is part of our commitment to ensuring all our customers have a comfortable experience.

Practical Steps Before Your Visit: Partnering for a Safe Experience

To ensure you can safely enjoy our Yasu seafood and Yasu robatayaki, collaboration between you and our restaurant is essential. We would be grateful if you could keep the following points in mind and cooperate with us before your visit.

What We Ask of Our Customers

  • Please contact us in advance. Accommodating allergies may require special preparations and time. Contacting us by phone or through our inquiry form a few days before your planned visit will allow for a smoother and more reliable service. Advance notice is especially crucial if you are booking a Yasu banquet with guests who have allergies.

  • Please specify your allergens. Providing specific and accurate information, such as I am allergic to X, is key to ensuring we can provide you with a safe meal. For instance, detailed information like, I am allergic to shrimp and crab, or I cannot eat wheat and eggs, is extremely helpful.

  • Please don't hesitate to ask questions. If you have any concerns or questions about the menu or the ingredients, please feel free to ask our staff. We are here to sincerely answer your questions and provide the information you need.

How to Consult with Us in Advance

  • The most reliable way to discuss your allergy needs is to speak with us directly over the phone. During our business hours, we can listen to the details and propose specific solutions.

  • If our website has a contact form, you can also send us a message through it. When you do, please include your contact information, planned visit date, and detailed information about your allergens.

  • On the day of your visit, our staff may reconfirm your allergy information as a precaution. We appreciate your understanding and cooperation, as this is for your safety.

What We Can and Cannot Do

  • We will do our utmost to accommodate your allergies and meet your requests to the best of our ability. We are always committed to doing our best for your enjoyment and safety.

  • However, due to limitations in our kitchen facilities and the nature of certain ingredients, it may be difficult to completely eliminate allergens in some cases (e.g., the risk of trace amounts of airborne flour in an environment where it is used heavily). If such a risk of cross-contamination exists, we will honestly inform you and ask for your understanding and judgment.

  • Our goal is to work together with our customers in an atmosphere of mutual trust to create a safe and enjoyable dining experience. Please feel free to consult with us about any concerns, no matter how small.

Conclusion: Bringing Safety and Smiles to All with Yasu Seafood

We want you to fully enjoy the appeal of Yasu seafood, and above all, to do so with complete peace of mind. This desire is the driving force behind our commitment to allergy-friendly service. With our Yasu robatayaki featuring fresh fish delivered directly from the fishing port, an extensive selection of Yasu sake, and a comfortable atmosphere as a smoking-friendly izakaya in Yasu, our restaurant has become a chosen venue for Yasu banquets and many other occasions.

Allergies can sometimes be a barrier to the joy of dining out, but we will continue our efforts to remove that barrier as much as possible so that all our customers can be truly satisfied. Please do not hesitate to speak with our staff when making a reservation, upon arrival, or at any time during your meal.

Your smile is our greatest reward. We invite you to visit us and experience our Yasu seafood dishes and our meticulous allergy-friendly service for yourself. We sincerely look forward to welcoming you.
