Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

Service

01

Robata & Warayaki

How to enjoy Robata

Robata Story

01

A 45 seat room puts you near the fire

Thirteen counter seats, twelve table seats, eight in the private room and twelve on the terrace: 45 in all. In a room this size, the flames and the crackle of the straw reach every seat.

02

Nothing added, just the ingredient

The finished surface carries the smoke of burning straw. Leave the first slice unseasoned and taste the natural sweetness underneath.

03

In winter, cold yellowtail with salt and citrus

Later in the plate, shift with condiments, rock salt and citrus. Winter brings kanburi yellowtail, whose fat loosens and lightens against salt and citrus.

04

A cigarette and a cup, out to the terrace

Every seat, including the twelve on the terrace, allows smoking. Our staff suggest Shiga sake, dry through sweet, to match your sashimi or straw-grilled dish.

Savoring the Flavors of the Four Seasons at Our Pub Near Yasu Station

What our establishment values most is delivering the blessings of shun (the peak season) nurtured by Japan's rich four seasons to our customers' tables. As a pub near Yasu Station, providing ingredients in their prime condition is essential to be loved by the local community. That's why we boldly yet delicately change our menu in tune with the shifting seasons.

In spring, we offer vibrant mountain vegetables and the elegant sweetness of cherry sea bream. In summer, the freshness of ayu (sweetfish) from Lake Biwa and crisp summer vegetables. In autumn, the deep flavors woven by fatty saury and seasonal mushrooms. And in winter, the firm meat of winter yellowtail and the rich umami of crab. We pursue the once-in-a-lifetime deliciousness that can only be encountered in each respective season.

  • A vibrant spring assortment of sashimi: A visually beautiful dish with cherry sea bream, squid, and seasonal white fish.
  • A refreshing summer dish: Salt-grilled fresh ayu from Lake Biwa or a chilled chawanmushi (savory egg custard).
  • Packed with autumn flavors: Salt-grilled fatty saury or dobimushi (steamed in an earthenware pot) with matsutake and other mushrooms.

The Essence of Fresh Fish Direct from the Port and Our Commitment as a Pub Near Yasu Station

The seafood we serve is something special, which cannot be summed up by the simple word fresh. Every morning, we source fresh fish directly from various fishing ports, carefully selecting the very best catch of the day. This is our unwavering commitment as a pub near Yasu Station to provide our customers with the best possible experience.

It's not just about freshness; we identify the type and characteristics of each fish and prepare it in a way that brings out its ultimate flavor. You can enjoy the firm texture and umami of the fish as sashimi, of course, but we also employ creative methods that highlight the ingredients, such as searing, simmering, and grilling. With just one bite, you'll feel the powerful bounty of the sea, as if the lively atmosphere of the fishing port itself is right before your eyes.

  • Today's carefully selected sashimi: The best fish of the day, prepared to perfection by our skilled chefs.
  • Seared marinated mackerel (Shime Saba): The skin is fragrantly seared to concentrate the umami of the fish.
  • Simmered local fish: Carefully simmered in a savory dashi broth for a comforting, nostalgic flavor.

The Rich Flavors and Aromas Woven by Robatayaki Grilling

Our Yasu Robatayaki (fireside grill), with its fragrant aroma that whets the appetite, is one of our signature specialties. The style of slowly grilling over charcoal right before your eyes provides a special experience that stimulates all five senses: sight, sound, smell, taste, and the touch of warmth. The far-infrared effect of the charcoal slowly cooks the food, locking in the umami of the ingredients, resulting in a crispy, fragrant exterior and a plump, juicy interior.

You can enjoy a variety of ingredients prepared robatayaki-style, from fresh seafood to locally harvested seasonal vegetables and carefully selected meats. Because it's a simple cooking method, the quality of the ingredients directly translates to the taste. Our expert grill masters carefully cook each item, discerning its unique characteristics to maximize its inherent, deep flavor.

  • Charcoal-grilled fresh fish: The best catch of the day, simply salt-grilled.
  • Robata-grilled local vegetables: Fresh vegetables from Shiga Prefecture, seasoned with salt to enhance their natural sweetness.
  • Salt-grilled Omi chicken: The umami of the juicy chicken is further enhanced by the charcoal fire.

Another unique pleasure of our establishment is for you to enjoy new sake encounters that pair with the seasonal dishes that change with the seasons.

  • Information on seasonal limited-edition sake: Try rare, limited bottles that can only be tasted at this time of year.
