Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

Service

01

Robata & Warayaki

Bonito from Kochi and Omi beef from Shiga, grilled over straw right before you. Seasonal fish and vegetables draw out their fullest flavor over charcoal.

02

Sake & Local Brews

A generous selection of sake chosen from across Japan, including local Shiga brews — from dry to sweet. Our staff suggest the one glass that suits your dish, so you can enjoy sake tasting in Yasu.

03

Seafood & Sashimi

Fresh fish shipped straight from the port, finished into sashimi by skilled hands. Enjoy the seafood of Yasu in seasonal plates such as our five-kind sashimi platter.

04

Omi Beef & Omi Chicken

Shiga's specialty Omi beef, straw-grilled or miso-marinated, and overnight-dried Omi chicken. Enjoy Shiga's premium ingredients dynamically over charcoal in Yasu.

05

Private Rooms & Banquets

Relaxing private rooms, banquet courses with free-flow drinks, and full-venue bookings on request. Steps from Yasu Station — ideal for company parties and gatherings.

How to enjoy Robata

Robata Story

01

A 45 seat room puts you near the fire

Thirteen counter seats, twelve table seats, eight in the private room and twelve on the terrace: 45 in all. In a room this size, the flames and the crackle of the straw reach every seat.

02

Nothing added, just the ingredient

The finished surface carries the smoke of burning straw. Leave the first slice unseasoned and taste the natural sweetness underneath.

03

In winter, cold yellowtail with salt and citrus

Later in the plate, shift with condiments, rock salt and citrus. Winter brings kanburi yellowtail, whose fat loosens and lightens against salt and citrus.

04

A cigarette and a cup, out to the terrace

Every seat, including the twelve on the terrace, allows smoking. Our staff suggest Shiga sake, dry through sweet, to match your sashimi or straw-grilled dish.

Producers

Savoring the Seasons: Robatayaki in Yasu

Yasu Robatayaki: A Story of Encountering Seasonal Blessings

To all who wish to eat truly delicious food and have a memorable dining experience in Yasu City, Shiga Prefecture. We aspire to bring you precious moments that color your daily dining table, accompanied by seasonal delicacies. In particular, Yasu Robatayaki is a cooking method that brings out the maximum flavor of the ingredients themselves, offering the joy of tasting with all five senses. Surrounded by fire and enveloped in a fragrant aroma, the seasonal ingredients grilled right before your eyes are truly a feast.

In this column, we will delve into how Yasu Robatayaki enriches your dining experience and explore the appeal of our changing menu with the shifting seasons. What brilliance do fresh seafood and mountain blessings reveal over the robata flames? Please read to the end for tips on your next dining out experience.

The Difficulty of Finding Truly Delicious Seasonal Ingredients

I want to eat delicious fish today, I want to savor plenty of seasonal vegetables. Even if you think so, when it comes to finding a restaurant, do you ever get lost wondering where truly fresh ingredients are offered, and how their charms are brought out by the cooking method? Especially, seasonal ingredients have limited harvest periods, and judging their freshness and quality is not easy.

Furthermore, there might be organizers looking for a Yasu banquet course for colleagues, or people seeking a Yasu private izakaya for a special gathering with friends, and even those looking for a Yasu smoking-friendly izakaya to enjoy a meal while slowly smoking. It can be surprisingly difficult to find truly satisfying cuisine while meeting various needs. We strive daily to solve these concerns and provide the best dining experience.

Satiate Your Senses with Seasonal Blessings at Yasu Robatayaki

Commitment to Freshness: Freshly Caught Blessings to Yasu's Table

We are committed to fresh fish delivered directly from the fishing port, procuring freshly landed seafood every morning from our partner ports on the same day. Our sole desire is to bring you freshness that makes you feel the vibrancy of the fishing port, even while in Yasu. Especially during the peak season, rich, fatty fish and firm shellfish are abundantly stocked, becoming the stars of our robatayaki.

By eliminating intermediaries, we minimize the deterioration of freshness during distribution, allowing us to deliver our fresh fish to you in the best possible condition. While the types of fish caught vary by season, all are carefully selected and perfect for robatayaki.

The Art of Robatayaki: The Craftsmanship of Chefs Bringing Out the Best in Ingredients

The greatest charm of robatayaki lies in its simple cooking method that brings out the inherent taste of the ingredients. Our skilled chefs grill fish and vegetables with exquisite heat control, resulting in a crispy exterior and a tender, juicy interior. Especially by slow-grilling over wood or charcoal, a unique aroma is imparted to the ingredients, completing a flavorful dish that cannot be experienced at home.

We sincerely face each ingredient, always striving to maximize its individuality. For instance, seasonal vegetables highlight their sweetness, and fish concentrates its natural umami. With this craftsmanship and the power of fire combined, Yasu Robatayaki transcends mere cooking to become an art form.

The Passage of Seasons: Japan's Four Seasons Reflected in the Menu

Japan's four seasons give ingredients rich expressions. In spring, sea bream and bamboo shoots; in summer, rock oysters and sweetfish; in autumn, returning bonito and matsutake mushrooms; in winter, crab and yellowtail – a wide variety of ingredients reach their peak seasonality. At our restaurant, we vividly reflect the beautiful transition of Japan's four seasons in our Yasu Robatayaki menu.

Our seasonal recommendation menu is truly a special, once-in-a-lifetime encounter that can only be savored during that specific period. Every visit brings a new discovery, and our robatayaki is filled with charms that make you want to return again and again. Please enjoy the new faces of our robatayaki with the changing seasons.
