Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

How to enjoy Robata

Robata Story

01

A 45 seat room puts you near the fire

Thirteen counter seats, twelve table seats, eight in the private room and twelve on the terrace: 45 in all. In a room this size, the flames and the crackle of the straw reach every seat.

02

Nothing added, just the ingredient

The finished surface carries the smoke of burning straw. Leave the first slice unseasoned and taste the natural sweetness underneath.

03

In winter, cold yellowtail with salt and citrus

Later in the plate, shift with condiments, rock salt and citrus. Winter brings kanburi yellowtail, whose fat loosens and lightens against salt and citrus.

04

A cigarette and a cup, out to the terrace

Every seat, including the twelve on the terrace, allows smoking. Our staff suggest Shiga sake, dry through sweet, to match your sashimi or straw-grilled dish.

We are especially confident in the freshness of our ingredients, which are the lifeblood of robatayaki. By the time you finish reading this, you'll surely be tempted to open our doors.

We hope to create the best culinary memories for you here in Yasu as we introduce the charms of our restaurant.

What is Robatayaki? A Blissful Experience for All Five Senses

Robatayaki is more than just a cooking method; it's an art form that combines respect for ingredients and culinary skill, nurtured by Japanese food culture. Watching our skilled chefs use large wooden paddles to grill ingredients over an open flame is a show in itself. You can see, hear, smell, and taste the entire process—the crackling of the charcoal, the fragrant aroma, and the way the natural flavors of the ingredients are concentrated. While cherishing this traditional robatayaki style, we also incorporate modern touches to meet our customers' needs. In particular, we focus on maximizing the quality of our fresh seafood delivered directly from the fishing port by grilling it over the robata.

  • A Visual Thrill: The live cooking right before your eyes enhances the anticipation for your meal.
  • An Aromatic Delight: The scent of seafood and vegetables grilled over charcoal whets your appetite.
  • A Pleasing Soundscape: The crackling charcoal and sizzling ingredients are part of the dining experience.
  • A Taste of Authenticity: Experience the true, unadulterated flavors of the ingredients, highlighted by simple preparation.

From Our Head Chef: The 'Yasu Banquet Course'—A Lavish Taste of the Season

To help you fully savor Yasu Robatayaki, our head chef has meticulously designed a course menu that is one of our greatest prides. We select the most delicious seasonal ingredients, with robatayaki as the centerpiece, creating a well-balanced composition that includes appetizers and closing dishes. We highly recommend this course, especially for first-time guests and for organizers planning a Yasu banquet course for a group.

Course Content Reflecting the Best of Each Season

Our head chef's special course generously uses unique ingredients that can only be enjoyed during their peak season. For example, we feature sea bream and spring vegetables in spring, rock oysters and sweetfish in summer, returning bonito and mushrooms in autumn, and crab and yellowtail in winter, sourced directly from fishing ports across the country. This means you can discover new and exciting flavors with every visit. In addition to our signature robatayaki, you can enjoy an assortment of fresh sashimi, creative dishes using seasonal vegetables, and a special clay pot rice to finish.

  • Appetizer: A colorful assortment of seasonal small dishes to stimulate your appetite.
  • Sashimi: A platter of fresh seafood delivered directly from the fishing port. Savor the day's best catch.
  • Robatayaki: Our signature dish, featuring fish, meat, and vegetables hand-picked by the head chef and grilled to perfection.
  • Signature Dish: A creative masterpiece using seasonal ingredients.
  • Main Course: A comforting rice or noodle dish to conclude the meal.
  • Dessert: A refreshing sweet finish featuring seasonal fruits.

These courses are not just a sequence of dishes; each plate tells a story and is crafted with care. Please take note of the cooking methods that bring out the natural flavors of the ingredients and the presentation that delights the senses.
