Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

How to enjoy Robata

Robata Story

01

A 45 seat room puts you near the fire

Thirteen counter seats, twelve table seats, eight in the private room and twelve on the terrace: 45 in all. In a room this size, the flames and the crackle of the straw reach every seat.

02

Nothing added, just the ingredient

The finished surface carries the smoke of burning straw. Leave the first slice unseasoned and taste the natural sweetness underneath.

03

In winter, cold yellowtail with salt and citrus

Later in the plate, shift with condiments, rock salt and citrus. Winter brings kanburi yellowtail, whose fat loosens and lightens against salt and citrus.

04

A cigarette and a cup, out to the terrace

Every seat, including the twelve on the terrace, allows smoking. Our staff suggest Shiga sake, dry through sweet, to match your sashimi or straw-grilled dish.

Exceptionally fresh seafood, brought to its peak condition by skilled chefs, will adorn your table. In this article, we will detail how we create this ultimate experience, sharing the passion and ingenuity for ingredients that happen behind the scenes.

Your quest for delicious seafood will find its answer at our restaurant. When you want to spend a special evening in Yasu, or simply wish to soothe the fatigue of daily life, please come and knock on our door.

How to Find Truly Delicious Yasu Seafood

Even within the category of Yasu Seafood, the quality and preparation methods vary widely. The seafood available at the market is diverse, each with its own unique characteristics. What customers are truly looking for is a deep sense of satisfaction that can't be summed up by the word fresh alone. However, the question of which restaurant to choose to find that authentic experience always remains.

Common challenges for many customers include the assurance of freshness and quality, and the expectation of cooking methods that maximize these attributes. Furthermore, dining occasions are diverse, from anniversaries and conversations with loved ones to banquets in Yasu with close friends. Whether a restaurant can provide the optimal cuisine and atmosphere for each scene is also a crucial point when making a choice.

We will now carefully explain our concrete solutions to these questions and challenges, and the reasons why you can choose our restaurant with confidence.

  • What is truly fresh seafood? How to identify it
  • Cooking methods that maximize the natural flavor of each type of seafood
  • Cuisine and space options tailored to different occasions

Our Commitment: The Essence of Yasu Seafood Woven from Port-Direct Fresh Fish

The reason our Yasu Seafood is so special lies, above all, in its freshness and quality. Every morning, we source select fresh fish delivered directly from fishing ports across the country. By minimizing intermediaries, the seafood arrives at our restaurant via the shortest possible route to be served to our customers. This port-direct fresh fish is the core commitment that forms the foundation of our cuisine.

The Secret to Maintaining Peak Freshness: Expert Judgment and Swift Transport

The quality of fresh fish is greatly influenced by the time and handling from catch to table. At our restaurant, seasoned experts with years of experience select the best seafood according to the day's weather and catch conditions. The chosen seafood is then swiftly transported to our restaurant with the utmost care to preserve its freshness. This rigorous management system is the unwavering pillar that supports the deliciousness of our Yasu Seafood.

  • Daily Sourcing: Fresh bounty from the sea delivered directly from the fishing port, not the market.
  • Expert Judgment: The professional skill to identify peak season and optimal condition.
  • Rigorous Freshness Management: No compromises, from temperature control during transport to storage at the restaurant.

The Seasonal Flavors of In-Season Seafood

Japan has four rich seasons, and the sea shows different faces with each one. At our restaurant, we actively incorporate seasonal seafood at its most delicious, offering dishes that maximize the appeal of Yasu Seafood. You can enjoy the unique, luxurious flavors of each season: fatty first-of-the-season bonito in spring, refreshing horse mackerel and squid in summer, returning bonito and saury in autumn, and firm winter yellowtail in winter.

Seasonal seafood possesses a special umami and flavor that can only be enjoyed at that time of year. We respect the inherent deliciousness of each type of seafood, avoiding excessive processing and focusing on cooking methods that bring out the natural taste of the ingredients. With just one bite, you'll feel an excitement as if the bounty of the sea is dancing on your tongue.

The True Pleasure of Yasu Robatayaki Drawn Out by Fireside Grilling

To help you enjoy our port-direct fresh seafood at its absolute best, we confidently recommend our Yasu Robatayaki. Robatayaki, where ingredients are slowly grilled over charcoal right before your eyes, is a supreme cooking method that condenses the natural umami of the seafood and adds a fragrant aroma.

The Magic of Charcoal: Maximizing the Umami of Ingredients

The appeal of robatayaki lies in the power of charcoal, which has a far-infrared effect. The surface of the ingredients is grilled to a crisp, fragrant finish, while the inside remains plump and juicy. For fresh seafood in particular, grilling over charcoal removes excess moisture and intensely concentrates the umami. Because it is seasoned simply with just salt, you can fully enjoy the delicate, natural flavor of the seafood.

From the counter seats, you can watch up close as the ingredients are grilled over the charcoal. The crackling sound of the fire, the rising fragrant smoke, and the beautiful colors of the grilling seafood—enjoying this with all five senses is a unique pleasure of robatayaki.

  • Far-Infrared Effect: Cooks ingredients to the core while locking in umami.
  • Simple Seasoning: Maximizes the natural deliciousness of the ingredients themselves.
  • A Feast for the Senses: A harmony of sound, aroma, sight, and, of course, taste.

An Abundant Robatayaki Menu: From the Bounties of the Sea to the Mountains

Our robatayaki menu features not only port-direct fresh fish but also seasonal vegetables grown in the rich land of Omi and carefully selected meats. By carefully grilling a diverse range of seasonal ingredients over charcoal, we bring out the best flavor of each. Enjoying a balance of seafood and mountain produce will allow you to experience the gastronomy of Yasu more deeply.

For example, depending on the day's catch, we might recommend salt-grilled fish collar for seasonal fish, charcoal-grilled shiitake mushrooms for fresh vegetables, or salt-grilled Omi chicken. If you're unsure what to order, please feel free to ask our staff.

Enhancing Your Yasu Banquet: Sake and a Smoking-Friendly Space

With delicious Yasu Seafood and robatayaki, you naturally need excellent sake and a space where you can converse to your heart's content. We focus on providing a lineup of sake carefully chosen to pair with our dishes and creating a comfortable environment for both smokers and non-smokers.

A Blissful Marriage with Yasu Sake

Sake is the perfect companion for fresh seafood. Our restaurant offers a wide selection of carefully chosen sake from all over Japan, with a focus on local brews from Shiga Prefecture. We have various types, from dry and crisp to fruity and aromatic, and those with a mellow umami character. You can choose your favorite sake to match your meal.

For example, a sharp, dry junmai sake pairs wonderfully with delicate white fish, while a junmai ginjo with a rich rice umami complements fattier fish, enhancing the flavors of both. If you're unsure which sake to choose, please consult our staff. We will recommend the perfect glass to suit your preferences.

  • Extensive Lineup: From local Shiga sake to famous brews from across the country.
  • Food Pairing: We suggest the best sake to go with each seafood dish.
  • Expert Knowledge: Our knowledgeable staff are here to assist you.
