Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

How to enjoy Robata

Robata Story

01

A 45 seat room puts you near the fire

Thirteen counter seats, twelve table seats, eight in the private room and twelve on the terrace: 45 in all. In a room this size, the flames and the crackle of the straw reach every seat.

02

Nothing added, just the ingredient

The finished surface carries the smoke of burning straw. Leave the first slice unseasoned and taste the natural sweetness underneath.

03

In winter, cold yellowtail with salt and citrus

Later in the plate, shift with condiments, rock salt and citrus. Winter brings kanburi yellowtail, whose fat loosens and lightens against salt and citrus.

04

A cigarette and a cup, out to the terrace

Every seat, including the twelve on the terrace, allows smoking. Our staff suggest Shiga sake, dry through sweet, to match your sashimi or straw-grilled dish.

Enjoy Izakaya Cuisine from Yasu at Home!

The New Norm for Enjoying Yasu Izakaya Cuisine at Home: A Complete Guide to Takeout & Delivery

Yasu City, Shiga Prefecture. This area, blessed by the bounty of Lake Biwa, is home to many Yasu Izakayas that offer warm hospitality and delicious cuisine featuring seasonal ingredients. They are an indispensable part of our daily lives—a place to unwind after work, chat with friends, or spend precious time with loved ones. However, there are times when you might think, I want to go, but I can't find the time, Eating out is difficult with small children, or I'd love to savor the restaurant's flavors in the comfort of my own home.

That's precisely when you should take advantage of the takeout and delivery services offered by Yasu's izakayas. We are now in an era where you can easily enjoy the authentic taste of an izakaya at home. Far beyond a simple bento box, these exquisite dishes, packed with the restaurant's uniqueこだわり (commitment), will brighten up your dining table. In this article, we'll reveal the secrets to fully enjoying takeout and delivery from Yasu izakayas, along with specific tips and tricks.

Want to Enhance Your At-Home Izakaya Experience? Smart Ordering and Preparation Tips

The thought of enjoying the flavors of a Yasu Izakaya at home is exciting, isn't it? However, you might have questions or concerns like, What kind of dishes should I order? or Can I really replicate the restaurant's taste at home? Naturally, you want more than just a takeaway meal; you want to fully experience the same感動 (impression) and satisfaction you'd get at the restaurant.

Takeout and delivery are convenient services that let you easily enjoy a restaurant's flavors, but with a little ingenuity, your satisfaction can be significantly enhanced. Here, we will share specific tips, from how to order smartly to how to prepare for enjoying the food in its best condition.

  • Tips for Choosing Your Menu

While the restaurant's signature dishes are a great choice, also pay attention to limited-time menus created specifically for takeout and delivery. These items may be designed for easy transport or cooked with reheating at home in mind. For example, consider if fried items are prepared to stay crispy even when cooled, or if simmered dishes are well-infused with flavor and will taste delicious after reheating.

  • Adjusting Pickup and Delivery Times

To maintain the freshness and warmth of your food, timing your pickup or delivery is crucial. Try to order by calculating backward from your planned mealtime. Especially for dishes where freshness is key, like Yasu seafood, the secret to deliciousness is to eat them as soon as possible.

  • Smooth Start with Advance Preparation

By setting the table before your food arrives, you can start your at-home izakaya experience smoothly. Simply preparing serving plates, chopsticks, drinks, and a few small items to decorate the table can make it feel much more like being at the restaurant.

[Specific Solution 1] Mastering Yasu Seafood & Robatayaki at Home! Secrets to Preserving Freshness and Aroma

One of the charms of Yasu izakayas is their fresh Yasu seafood dishes and their Yasu robatayaki, grilled slowly over charcoal. When enjoying these delicacies at home, the main concerns are likely freshness and warmth and aroma. Here's how to replicate the restaurant experience in your own home.

Tips for Savoring Fresh Yasu Seafood

Izakayas in Yasu serve not only the blessings of Lake Biwa but also seasonal seafood sourced from all over Japan. While they take measures to preserve freshness for takeout and delivery, a little extra effort at home can make it even more delicious.

  • Refrigerate Immediately Upon Receipt

For raw Yasu seafood dishes like sashimi and kaisendon (seafood bowls), store them in a cold place like the chilled compartment of your refrigerator as soon as you receive them. Ideally, take them out just before eating.

  • Enjoy with Your Eyes Through Plating

While it might be difficult to plate as beautifully as the restaurant, you can still make your table look splendid with a little creativity. Instead of putting everything on one large platter, try arranging smaller portions on individual plates. Adding garnishes like shiso leaves, sliced cucumber, or myoga ginger can make a big difference in appearance. Adding green and red vegetables will create a vibrant look.

  • Pay Attention to Wasabi and Soy Sauce

The condiments and soy sauce provided by the restaurant are delicious, but if you have some high-quality wasabi or your favorite sashimi soy sauce at home, give them a try. A different flavor profile can heighten your satisfaction even more.

How to Reheat Yasu Robatayaki to Recapture its Aroma

Yasu Robatayaki, slowly grilled over charcoal, is prized for its unique, fragrant aroma. While it may cool down during takeout or delivery, you can get it very close to the restaurant's quality by reheating it properly.

  • Robatayaki Seafood (Dried Fish, Grilled Fish, etc.)

For seafood, it's best to reheat using a fish grill or a toaster oven, not a microwave. Place it on aluminum foil and heat it slowly on low to medium heat to prevent burning, resulting in crispy skin and fluffy meat. If you're worried about burning, you can cover it with foil to steam-grill it. It's especially delicious served with freshly grated daikon radish while hot.

  • Robatayaki Meat & Vegetables (Skewers, Grilled Vegetables, etc.)

Skewers and grilled vegetables are also best reheated in a toaster oven or on a frying pan. If using a frying pan, use a small amount of oil or a cooking sheet to prevent sticking. Covering with a lid will steam the inside and warm it through. For yakitori, slightly charring the outside enhances the aroma, and a sprinkle of shichimi togarashi (seven-spice blend) makes it even better.

  • A Small Touch for a Freshly-Made Feel

You can bring back that just-cooked aroma and flavor by drizzling the provided sauce over the reheated robatayaki or squeezing some fresh lemon juice on top. Tossing it with the sauce while it's still hot is particularly effective for letting the flavor soak in.

[Specific Solution 2] The Harmony of Yasu Sake and Cuisine: Mastering Pairings at Home

The true pleasure of a Yasu Izakaya is savoring delicious food alongside Yasu sake. From local Shiga brews to famous brands from across the country, a wide variety of sake enhances the flavors of the cuisine. Here are some hints for fully enjoying these pairings at home with your takeout or delivery order.

Choosing the Right Yasu Sake for Your Dishes

Izakaya cuisine is diverse, but knowing some basic pairings can make choosing sake much more enjoyable.

  • Dry Junmai Sake with Light Seafood Dishes

For dishes that highlight the natural flavor of the ingredients, like Yasu seafood sashimi or carpaccio, a crisp, dry Junmai or Junmai Ginjo sake is recommended. It refreshes the palate and prepares you for the next dish.

  • Sake with Rich Umami for Richly Flavored Robatayaki

For dishes like yakitori with tare sauce or fatty grilled fish from the Yasu robatayaki menu, a Junmai Ginjo, Junmai Daiginjo, or aged sake with a robust rice umami pairs well. The richness of the food and the umami of the sake create a synergistic effect.

  • Try Seasonal Yasu Sake

Yasu izakayas often offer limited-edition seasonal sake. When ordering takeout or delivery, it's a great idea to ask the staff, Do you have a recommended sake to go with this dish? You might make an unexpected discovery.

Enjoying Sake by Being Mindful of its Temperature

Sake is a beverage whose flavor changes dramatically with temperature. You can enjoy these transformations at home too.

  • Chilled (5–10°C): A Clean and Refreshing Taste

Sake with a high ginjo aroma or those paired with Yasu seafood are best enjoyed slightly chilled. Chilling your glasses will make it even more delicious.

  • Room Temperature (15–20°C): Opens Up the Rice's Original Umami and Aroma

Sake like Junmai, where you want to fully appreciate the umami of the rice, reveals its rich aroma and flavor when served at room temperature. It's said to pair particularly well with warm dishes like Yasu robatayaki.

  • Warmed/Hot (30–55°C): A Mellow and Profound Flavor

Warming sake (kan) brings out its inherent umami and richness even more. It's especially recommended during the cold winter months. The trick to making mellow warmed sake is to heat it slowly in a hot water bath.

[Specific Solution 3] Easy At-Home Planning! Tips for a Yasu-Style Banquet

Why not enjoy a casual Yasu banquet at home with colleagues, friends, or family? By utilizing takeout and delivery from a Yasu izakaya, you can minimize preparation time while still enjoying an exciting spread of authentic cuisine. Here are some planning tips to make your home banquet a success.

Menu Composition Ideas

Combining multiple dishes can create a satisfying experience similar to a restaurant's course meal.

  • A Balanced Menu from Appetizers to Main and Finisher

Start with cold appetizers like Yasu seafood (sashimi platters or carpaccio) and classic izakaya snacks (edamame, karaage fried chicken). For the main course, choose warm dishes like Yasu robatayaki or a simmered dish. To finish, selecting onigiri, chazuke (rice with tea), or one of the restaurant's signature rice bowls will complete a highly satisfying course.

  • Utilize Party Sets and Platters

Many Yasu izakayas offer platters or party sets for takeout and delivery, which include several types of dishes. Using these can help you enjoy a well-balanced meal without the stress of choosing individual items. It's also great that you can often choose a size that fits your group.

  • Consider Allergies and Preferences

If any participants have allergies or food aversions, confirm them in advance and choose a Yasu izakaya that can accommodate them, or adjust by ordering individual dishes. Some restaurants may be able to consult on allergy-friendly options.

Elevate Your 'Home Banquet' with Atmosphere and Preparation

Beyond the food, adding a few special touches can make your at-home party even more exciting.

  • Be Particular About Tableware and Glasses

Instead of your usual plates, try using some stylish Japanese ceramics or glass bowls. If you're drinking sake, preparing your favorite guinomi or ochoko cups is a nice touch. It makes the food look more delicious and elevates the mood.

  • Set the Scene with BGM

You can control the atmosphere by playing lively background music like you'd hear in a restaurant, or something more relaxed like jazz or traditional Japanese music. Create a comfortable space with music at a volume that doesn't interfere with conversation.

  • Consider Ease of Serving

When ordering large platters, have serving tongs, spoons, and forks ready so everyone can easily help themselves. Also, preparing plenty of small plates allows guests to enjoy a little bit of everything.

[Specific Solution 4] Discovering Hidden Gems at 'Kitano Izakayas'! The Appeal of Takeout-Exclusive Menus

Around Yasu Station, you'll find a line-up of unique Kitano izakayas. Did you know that some of them offer hidden gems that you might not normally see at the restaurant, available only through takeout or delivery? Here's how to enjoy these takeout-exclusive menus and discover a new side of your favorite spots.

What Are Menus Developed Specifically for Takeout?

In response to growing demand, many Kitano izakayas have developed special menus. These are often created with transportation and reheating at home in mind, with工夫 (ingenuity) to ensure the flavor lasts.

  • Creative Japanese Dishes from Yasu, Delicious Even When Cold

For example, Japanese dishes that don't lose their flavor when cold, like dashimaki tamago (rolled omelet), nimono (simmered dishes), and Japanese-style roast beef, are perfect for takeout. You can savor these exquisite dishes, which showcase the craftsmanship of a Kitano izakaya, at your leisure at home.

  • Appetite-Whetting! Special Bento Boxes and Rice Bowls

Ideal for lunch or dinner, takeout-exclusive bento boxes and rice bowls are also popular. Think seafood chirashi sushi, katsudon with a special sauce, or a yakitori bowl with a secret recipe tare. Their generous portions and restaurant-quality taste make them an attractive and easy meal.

  • Limited-Edition Items Featuring Seasonal Ingredients

Seasonal limited-time menus featuring an abundance of fresh fish and vegetables also appear on takeout menus. Check the restaurant's latest updates to find special dishes you can only taste at that time of year. It's a great chance to enjoy the seasonal flavors of Yasu seafood at home.

Information Gathering Tips: Check the Restaurant's SNS and Website

Information about takeout-exclusive menus and daily specials is often posted on the restaurant's official website or social media channels (like Instagram and Facebook). It's a good idea to check these sources frequently before ordering.

  • Always Check for the Latest Information

Follow the social media accounts of your favorite Kitano izakayas or bookmark their websites so you don't miss out on new menus and promotions.

  • Try Calling and Asking Directly

Even if there's no information online, calling the restaurant directly can be effective. If you ask, Do you have any recommendations for takeout? the staff might introduce you to a hidden gem themselves.

  • Use Reviews as a Reference

Reviews from people who have actually used the takeout service can also be helpful in choosing a menu. Reviews with photos are particularly useful for getting an idea of the plating and portion size.
