Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

How to enjoy Robata

Robata Story

01

A 45 seat room puts you near the fire

Thirteen counter seats, twelve table seats, eight in the private room and twelve on the terrace: 45 in all. In a room this size, the flames and the crackle of the straw reach every seat.

02

Nothing added, just the ingredient

The finished surface carries the smoke of burning straw. Leave the first slice unseasoned and taste the natural sweetness underneath.

03

In winter, cold yellowtail with salt and citrus

Later in the plate, shift with condiments, rock salt and citrus. Winter brings kanburi yellowtail, whose fat loosens and lightens against salt and citrus.

04

A cigarette and a cup, out to the terrace

Every seat, including the twelve on the terrace, allows smoking. Our staff suggest Shiga sake, dry through sweet, to match your sashimi or straw-grilled dish.

  • Discover the surprising compatibility of Japanese cuisine and wine.
  • Your usual izakaya experience will transform into something much richer.
  • Experience the unique dedication and creativity of Kitano Izakaya.

Wine at an Izakaya? Kitano Izakaya's Challenge to Convention

For many, an izakaya typically brings to mind beer, Japanese sake, or shochu. However, we challenge that convention and seek to pursue a freer, more enriched way of enjoying food. The delicate flavors of Japanese cuisine, the inherent umami of its ingredients, and the depth created by seasonality hold the potential for surprisingly wonderful marriages with a diverse range of wines.

At Kitano Izakaya, we are here to overturn any preconceived notions you may have that wine doesn't belong in an izakaya. Our approach isn't just about having wine available. We pour our passion into meticulously calculating the perfect combinations, matching the character of each dish with the aroma and flavor of the wine. As experts who understand the depth of Japanese cuisine, we offer a new izakaya experience that only we can provide.

  • We offer a new dining experience that expands the image of an izakaya.
  • Enjoy the exquisite harmony of Japanese cuisine and wine pairings to the fullest.
  • We are constantly honing our craft to bring a smile of 'delicious!' to our customers' faces.

The Essence of Wine Pairing: Fresh Fish from the Port and Yasu Robatayaki

The pillars of Kitano Izakaya's cuisine, fresh fish direct from the fishing port and Yasu robatayaki, truly shine when paired with wine. The bounty of the fresh sea and the savory aroma of robatayaki grilled slowly over charcoal reveal completely different expressions depending on the choice of wine.

A Delicate Harmony: Fresh Seafood and White Wine

The fresh fish delivered daily from the port varies in type and flavor depending on the day's catch. For instance, with delicate white fish sashimi, we recommend a crisp, dry white wine. A Sauvignon Blanc, with its characteristic citrus notes, enhances the delicate umami of the seafood and leaves a refreshing finish. For salt-grilled, oily seasonal blue-backed fish, a Chardonnay with strong minerality is a perfect match. The fish's oils and the wine's acidity intertwine exquisitely, amplifying each other's deliciousness manifold. At Kitano Izakaya, we suggest wines that maximize the freshness and flavor of our ingredients, so please feel free to ask for recommendations.

  • For fresh sashimi, a crisp, dry white wine brings out the umami.
  • For oily grilled fish, a mineral-rich white wine deepens the flavor.
  • Enjoy new encounters between seasonal seafood and wine that change with the seasons.

A Powerful Encounter: The Savory Aroma of Yasu Robatayaki and Red Wine

Yasu Robatayaki is a simple cooking method that maximizes the natural flavors of ingredients, while the charcoal fire adds a unique, savory aroma. This smokiness and deep flavor profile make it an excellent match for red wine.

For example, with slow-charcoal-grilled seared Omi beef or chicken skewers, we recommend a Pinot Noir with mild tannins and rich fruitiness. The umami of the meat and the fruitiness of the wine meld in your mouth, bringing out the best in each other. Additionally, a light, medium-bodied red wine can be a surprising discovery with grilled robatayaki vegetables. The sweetness and earthy notes of the vegetables harmonize with the wine's complex bouquet, creating an even richer flavor.

At Kitano Izakaya, our robatayaki honors the natural taste of the ingredients. That's why when selecting wine, we aim for pairings that enhance, rather than overpower, these flavors. Please come and experience the marriage of savory charcoal-grilled dishes and carefully selected red wines.

  • For seared Omi beef, a fruit-forward Pinot Noir is an exquisite match.
  • Discover new flavors by pairing grilled vegetables with a lighter red wine.
  • The savory aroma of charcoal grilling further enhances the bouquet of red wine.

An Unexpected Encounter: Deepening the Charm of Yasu's Japanese Sake with Wine

Kitano Izakaya also takes pride in its selection of Yasu's Japanese sake. Sake offers an incredibly diverse range of flavors, from those with a fruity ginjo aroma to junmai sake with concentrated rice umami, and aged sakes with complex flavors. By understanding the character of each sake, we can see surprising similarities with wine and the potential for pairings that enhance each other.

Crossover Pairings: Leveraging the Character of Sake with Wine

For example, a ginjo sake with a fruity, floral aroma shares a similar charm with a delicate sparkling wine. Both can serve as an apéritif to beautifully start a meal. Furthermore, a junmai sake with a robust rice umami can pair well with a light, smooth white wine or a light-bodied red wine. The mellowness and richness of junmai sake, in particular, can surprisingly match Western-style dishes one might not typically pair with sake, such as those made with butter or cream-based pastas.

Moreover, the complex aroma and deep flavor of an aged sake can be enjoyed much like an aged sherry or port wine. Sipping it slowly as a digestif will further deepen the lingering tastes of your meal. At Kitano Izakaya, we aim to blend the best of both sake and wine to offer our customers new discoveries. Please don't hesitate to ask our staff for 'a wine that pairs with sake' or 'a sake that pairs with wine.' You're sure to receive a surprising suggestion.

  • Ginjo sake and sparkling wine: For a brilliant start to your meal.
  • Junmai sake and light-bodied wines: Discover pairings with new types of cuisine.
  • Aged sake and dessert wines: For a deep, flavorful conclusion to your dinner.

At Kitano Izakaya, our staff is always ready to suggest the perfect wine for the day's dishes, tailored to your preferences. Our wine list features a diverse selection from around the world, but if you're unsure, please ask our staff.
